SHE: Healthy school lunch ideas for parents on a budget

Here are three healthy lunch tips suggested for parents who are looking for fresh – economical ideas for children who bring their own lunch to school.

The first two are versions of tortilla pinwheels I make for different family functions. However, after talking with friends I found their children enjoy them as classic sandwiches with a twist.

Peanut butter and jelly wraps. Daily News/Lonnie Allen

Peanut butter and jelly wraps:

  •  4 tablespoons peanut butter
  •  2 wheat tortillas (wrap size)
  •  2 teaspoons jelly

Take all-natural peanut butter and a type of fruit spread the child likes. Spread the peanut butter thin on an all wheat tortilla, then the jelly. Roll the tortilla and cut into 1 inch slices.

Turkey cream cheese pinwheels:

  •  1/2 cup of fat free cream cheese softened
  •  Ranch seasoning packet (optional)
  •  2 wheat tortillas (wrap size)
  •  2 cups chopped romaine or lettuce your child likes
  •  1 (8-ounce) all natural turkey breast slices
  •  1/2 cup shredded carrot, sprouts, zucchini etc. Usually the kids favorite

Mix the ranch packet and softened cream cheese together. Then spread 2 teaspoons cream cheese over entire surface of each tortilla. Top the cream cheese with chopped romaine or lettuce. Place 2 slices of turkey on 1/2 of each tortilla. Sprinkle 1 tablespoon shredded vegetables on top of the turkey slices. Roll the tortillas starting at the edge where you placed the turkey and cut roll into 1-inch slices.

 Applesauce leather: 

(Make this dish a head of time)

  •  16 oz jar of natural Apple sauce

To make applesauce leather simply spread a thin layer of unsweetened applesauce on a parchment paper lined cookie sheet. Cook in a very low oven (150-200 degrees) until it set, about 4 hours. Once set and cooled rip or cut pieces of applesauce leather and separate them by wax paper and store in airtight container. Refrigerating the container will make the shelf life longer.
